Halloween Cookies Recipe

Halloween Cookies Ingredients.

125grms butter at room temperature

125grm caster sugar

1-2 teaspoon vanilla essence

1 medium egg lightly beaten

225grms of self raising flour

100grms plain flour

Flavour variations

Chocolate replace 25grm of plain flour with 25grm of cocoa powder 

Cinnamon add 2 teaspoon of ground cinnamon omit the vanilla if you prefer

 

Method

Using a stand mixer beat the butter and sugar together until light in colour

mix the vanilla essence into the egg and gradually add to the butter and sugar. Beat well between each addition 

sift the flours together and tip into the bowl all at once. Mix on the slowest speed until the dough forms a ball

place a piece of baking parchment onto work surface put the dough in the centre, place another piece of parchment on top. 

Roll the dough to a thickness of 4-5mm. Refrigerate for at least 60mins

line a baking sheet with parchment paper, cut out the biscuits using your chosen cutter while the dough is still cold place the biscuits on the parchment evenly spaced out place smaller biscuits in the centre of the tray and larger ones around the outside

lightly kneed any cut off’s of dough together and re roll out chill the dough the dough again and cut as many biscuits as you can

pre heat the oven to 180c /350f gas 4 bake in the centre of the oven for 8-12 mins until the biscuits are brown at the edges and just starting to colour in the centre

leave on the baking tray for a couple of minutes then transfer to a wire rack to cool completely

once cool use your imagination to decorate with fondant icing and sprinkles
